Ham and Cheese Sliders

Ham and Cheese Sliders
adapted slightly from the Recipe Club

24 good white dinner rolls
24 pieces good honey ham
24 small slices Swiss cheese
1/3 cup mayonnaise
1/3 cup miracle whip

Poppy seed sauce (you probably could half this...I had plenty extra)
1 Tablespoon poppyseeds
1 1/2 Tablespoons yellow mustard
1/2 cup butter, melted
1 Tablespoon minced onion
1/2 teaspoon Worcestershire sauce

In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together.

In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm.

** sandwiches can be assembled a day ahead and kept in the fridge ready to bake.

BBQ Pork Sandwiches


Ingredients

  • 1 (14 ounce) can beef broth
  • 3 pounds boneless pork ribs
  • 1 (18 ounce) bottle barbeque sauce (baby rays)

Directions

  1. Pour can of beef broth into slow cooker, and add boneless pork ribs. Cook on High heat for 4 hours, or until meat shreds easily. Remove meat, and shred with two forks. It will seem that it's not working right away, but it will.
  2. After the meat is shredded mix with the barbeque sauce and
  3. store in the fridge over night, the next day put back in the
  4. crockpot and heat up for at least 4 hours on low, if the meat is 
  5. dry add more sauce.

Moms Teriyaki Porkchops

6-8 pork chops I usually get them at COSTCO sometimes I get boneless sometimes not
2 bottles of Lawry's teriyaki sauce
as many mushrooms you want whole and chopped washed and cleaned very well

brown the meat on both sides in an electric frying pan, after they are browned on both sides pour in the mushrooms and then the Lawry's sauce bring it to a boil, turn down heat and cook for about an hour, watch closely the sauce will thicken up but can burn easily.

Crock Pot Carnitas Tacos


Ingredients:

2 pounds boneless country- style pork ribs or pork shoulder (Boston Butt), cut into 1 1/2-inch pieces
2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons dried oregano (preferably Mexican)
1/2 large onion, cut into 4 pieces
1 large avocado, halved, pitted & sliced
fresh cilantro & sliced red bell peppers
tortillas (corn or flour)
green chile salsa

Directions:

1. Toss pork in bowl of slow cooker with salt, pepper, and oregano to coat. Place onion pieces atop pork. Cover slow cooker and cook pork on low setting until meat is very tender and falling apart, about 6 hours.
2. Using slotted spoon, transfer pork to cutting board. Discard onion pieces. Using fingers, shred pork; transfer carnitas to platter. Place avocado slices, cilantro sprigs, and sliced red bell peppers, if desired, alongside. Wrap corn or flour tortillas in damp kitchen towel; microwave until warm, about 1 minute. Serve carnitas with warm tortillas and green salsa.

Tips:

*If you need to prepare this recipe as GLUTEN FREE, just be sure to use a GF corn tortilla instead of flour.
*If you need to leave the slow cooker for longer than 6 hours, the pork will be just fine. We left ours in the slow cooker for 10 hours and it was tender as can be.

Pulled Pork Sandwiches


Ingredients
2-3 lb boneless Boston Butt
1 large onion, chopped
2 cloves garlic, chopped
1 tablespoon smoked paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon kosher salt
1 teaspoon pepper
2 cups liquid (I used non alcoholic white wine)
1 – 18 oz bottle barbecue sauce
Method
1. Mix paprika, oregano, thyme, salt and pepper in a little bowl. Then use spices as a rub for the meat. Add pork to crockpot and pour in liquid. Add garlic and onions. Turn crockpot on low for 8-10 hours.
2. The pork should be completely falling apart after cooking. Pour off liquid, reserving about 1/4 cup. Shred the pork with a fork and add barbecue sauce. Mix well. Turn crockpot to high for about 30 minutes, or until heated th

Kalua Pig in a Crockpot


Kalua Pig in a Crockpot
1 small (3-5 pound) pork blade shoulder (or pork shoulder butt) roast—something small enough to fit in your slow cooker easily
2-3 teaspoons salt
2-3 teaspoons freshly ground pepper
2-4 tablespoons Wright's hickory liquid smoke
1. Place roast in the crockpot. Using plastic kitchen gloves or plastic bags to cover your hands, rub salt, pepper, and liquid smoke into all sides of the pork. Rub it in as deeply into the meat as you can for about 10 minutes. Put the lid on the crockpot and cook on low for 8-10 hours.
2. Using two forks, flake the meat until shredded. Serve with potato salad, fruit salad, and calrose rice.

Easy Pork Carnitas


2 pork tenderloins (about 1 pound each)
1 jar of salsa verde (green salsa–any kind)
1 can Rotel tomotoes
1 can chopped green chiles
1 onion, chopped in large pieces
Cover in crockpot and cook on low until pork easily forks apart (about 10 hours). Serve buffet-style with flour tortillas, cheese, cilantro, avocado, tomatoes, lettuce and sour cream.

Crock Pot Ham


Ingredients

2 cups packed brown sugar
1 (8 pound) cured, bone-in picnic ham
Directions

Spread about 1 1/2 cups of brown sugar on the bottom of the slow cooker crock. Place the ham flat side down into the slow cooker - you might have to trim it a little to make it fit. Use your hands to rub the remaining brown sugar onto the ham. Cover, and cook on Low for 8 hours.

BBQ Pork for Sandwiches


Ingredients

1 (14 ounce) can beef broth
3 pounds boneless pork roast I use the ones from COSTCO boneless
1 (18 ounce) bottle barbeque sauce I like baby rays
Directions

Pour can of beef broth into slow cooker, and add boneless pork roast. Cook on High heat for 4 hours, or until meat shreds easily. Remove meat, and shred with two forks. It will seem that it's not working right away, but it will.
**Preheat oven to 350 degrees Transfer the shredded pork to a Dutch oven or iron skillet, and stir in barbeque sauce.
Bake in the preheated oven for 30 minutes, or until heated through.
Usually I just leave it in the crockpot and after I shred it I let it cook another couple hours on high, it is very tender

Pig on a Stick


Ingredients
2 pounds pork tenderloin
1/2 cup light soy sauce
1/4 cup olive oil
2 cloves garlic, minced
1 tablespoon Dora's Jerk Seasoning, recipe follows
Caribbean Dipping Sauce, recipe follows
Special equipment: 2 dozen (10-inch) wooden skewers soaked in water for 20 minutes, then drained well.
Directions
Cut tenderloin in half crosswise. Cut each half lengthwise into 4-inch thin strips. Place pork in a heavy duty re-sealable plastic bag.

In a small bowl, combine soy sauce, olive oil, garlic, and jerk seasoning. Pour over pork. Seal bag, and marinate pork in refrigerator, 1 hour.

Turn on broiler.

When ready to cook the pork, line a broiler pan with aluminum foil. Lightly grease rack and place on pan. Remove pork from bag; discard marinade.

Thread pork onto skewers in an "s" shape. Place skewers in a single layer on a prepared pan. Broil 5 inches from heat for 8 minutes, turning once. Serve warm with Caribbean Dipping Sauce.

Dora's Jerk Seasoning:

1 tablespoon kosher salt

1 teaspoon ground allspice

1 teaspoon brown sugar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon dried, crushed Scotch bonnet pepper

1/2 teaspoon paprika

1/2 teaspoon dried chives

1/2 teaspoon ground nutmeg

1/2 teaspoon freshly ground black pepper

1/2 teaspoon ground ginger

1/4 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon dried thyme

Combine all ingredients in a bowl until well mixed. Store in an airtight container.

Yield: 1/2 cup


Caribbean Dipping Sauce:

1 tablespoon butter

1/2 to 1 jalapeno pepper, seeded and minced

1 teaspoon grated fresh ginger

1 (18-ounce) jar orange marmalade

2 tablespoons fresh lime juice

1/4 teaspoon salt

In a medium saucepan, melt butter over medium-high heat. Add pepper and ginger, and cook 2 minutes, stirring frequently. Reduce heat to medium-low, and stir in marmalade, lime juice, and salt. Simmer 5 minutes, stirring frequently.

*Cook's Note: Jalapeno peppers are extremely hot. We recommend wearing disposable gloves when handling them.

Yield: 2 cups

Baby Back Racks


Ingredients
2 racks baby back ribs (about 2 1/2 pounds)
Directions
1 recipe Barbecue Sauce, recipe follows

Preheat oven to 350 degrees F.
Cut the racks of ribs in half crosswise. Rub the ribs, paying special attention to the meaty side, with 1/2 cup of the sauce. Lay the rib pieces meat side down in an 11 by 13-inch baking dish. The pieces will overlap slightly.

Cover the dish tightly with aluminum foil and bake until the meat begins to pull away from the ends of the bones and the ribs are just tender, about 1 hour.

*Cook's Note: You can bake the ribs up to a day before and keep them refrigerated. Bring refrigerated ribs to room temperature about 1 hour before you grill them.

Preheat an outdoor grill to medium-high heat.

Grill the ribs, brushing them with about half the remaining sauce, until they're crispy and heated through, about 10 minutes. Move the ribs around as they grill; the sugar in the barbecue sauce makes it easy for them to burn. Let the ribs rest for 5 to 10 minutes before cutting them into 1 or 2-bone pieces. Put out the rest of the sauce for dipping or brush it over the ribs.

Barbecue Sauce:

1/2 cup olive oil
1/4 cup lemon juice
1/2 cup apple cider vinegar
3/4 cup water
3/4 chopped onion
3 tablespoons light brown sugar
1 teaspoon salt
3 tablespoons yellow prepared mustard
3/4 cup ketchup
2 tablespoons paprika
Pinch garlic powder
3 tablespoons Worcestershire sauce
Freshly ground black pepper
Stir all ingredients together in a small saucepan. Bring to a simmer and cook until slightly thickened, about 10 minutes. The sauce will keep in the refrigerator, covered, for up to 2 weeks.

Yield: 3 cups

Pork Chops with Raspberry Sauce


INGREDIENTS
1/2 teaspoon dried thyme, crushed
1/2 teaspoon dried sage, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
4 (4 ounce) boneless pork loin chops
1 tablespoon butter
1 tablespoon olive oil
1/4 cup seedless raspberry jam
2 tablespoons orange juice
2 tablespoons white wine vinegar
4 sprigs fresh thyme (optional)

Preheat oven to 200 degrees F (95 degrees C). In a small bowl, combine crushed thyme, sage, salt, and pepper. Rub evenly over pork chops.
Melt butter and olive oil in a nonstick skillet. Cook pork chops for 4 to 5 minutes on each side, turning once. Remove from skillet and keep warm in preheated oven.
In the skillet, combine raspberry jam, orange juice, and vinegar. Bring to a boil, and cook for 2 to 3 minutes, or until sauce is reduced to desired consistency (sauce will thicken as it cools). Spoon sauce in a pool onto a serving plate, and top with pork chops. Garnish with sprigs of thyme.
FOOTNOTE
You may substitute 1 teaspoon minced fresh herbs for 1/2 teaspoon dried herbs

Barbecue Pork Roast


Ingredients
1/4 cup Worcestershire sauce
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons cider vinegar
3 teaspoons lemon juice
1 teaspoon prepared mustard
1 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon black pepper
2 cloves garlic, minced
1 (4-pound) pork loin roast
1 cup barbeque sauce
Directions
In a small bowl, combine Worcestershire sauce, soy sauce, honey, vinegar, lemon juice, mustard, salt, celery seed, pepper, and garlic. Place pork loin roast in a large plastic resealable bag and pour marinade over pork loin. Seal and marinate in refrigerator for at least 4 hours (preferably overnight).

Preheat oven to 325 degrees F.

Remove roast from bag, place in a roasting pan, and discard marinade. Roast pork loin at 325 degrees F for 2 to 2 1/2 hours, or to an internal temperature registers 160 to 170 degrees F. on an instant-read thermometer. Serve with BBQ sauce.

BBQ Pork Sandwich


Ingredients
Dry rub:
2 tablespoons salt
2 tablespoons black pepper
2 tablespoons dark brown sugar
2 tablespoons paprika
1/2 tablespoon cayenne
4 pound shoulder pork roast
2 cup apple juice
1 cup apple cider vinegar
2 tablespoons Worcestershire
1/2 tablespoon liquid smoke
1/2 tablespoon garlic powder
6 soft hamburger buns with seeds
Bbq sauce
Cole slaw
Directions
Preheat oven to 325 degrees F.

Mix the dry rub ingredients in small bowl. Sprinkle dry rub all over the pork roast, pressing into the pork. Cover with plastic and refrigerate for at least 2 hours.


Combine liquid ingredients and the garlic powder in a medium bowl and pour into a large Dutch oven. Place pork in the oven and tightly cover with aluminum foil then lid. Roast for 4 hours or until fork tender and shreds easily. Brush the roast with cooking liquid every hour.


Remove from oven and let stand until cool enough to handle. Shred the pork with a fork or tongs into bite size pieces.


Serve on hamburger buns topped with BBQ sauce and cole slaw

Smothered Pork Chops


Ingredients
4 center-cut pork chops, 1-inch thick
Salt and freshly ground black pepper
Ground cayenne pepper
2 tablespoons butter
1/4 cup all-purpose flour, spread on a plate
2 medium green bell peppers, stemmed, cored, and membranes removed, cut into strips
2 yellow onions, trimmed, cut lengthwise
3 cloves garlic, minced
2 cups chicken broth
2 to 3 dashes Worcestershire sauce
Directions
Trim the excess fat from the chops and season well with salt, pepper, and cayenne. Melt the butter in a skillet over medium heat. Lightly roll the chops in flour, shake off the excess, and slip them into the pan. Brown well, about 3 minutes per side, and remove them to a plate.

Add the bell peppers and onions, to the skillet, and saute until softened, about 3 minutes. Stir in the garlic and cook until fragrant, about half a minute longer. Push the vegetables to the side of the skillet. Add chops to pan and place vegetables on top of pork chops. Pour in the broth and sprinkle with Worcestershire sauce. Cover pan with foil and allow to simmer for 45 minutes or until chops are tender.

Sweet Mustard Chicken Bake


INGREDIENTS
4 boneless, skinless chicken breast halves
1/2 cup honey
1/2 cup Dijon mustard **or if you can find a honey mustard already mixed use 1 cup**
2-3 TBS cup butter, melted
1/4 teaspoon freshly ground black pepper

DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Grease a shallow baking dish.
In a small bowl, stir together the honey, Dijon mustard, melted butter and pepper. Place chicken in the greased baking dish, and pour the honey mustard sauce over it.
Bake for 45 minutes in the preheated oven, basting frequently with the sauce, until chicken is firm and juices run clear.
Serve with vegies and rice, can also use pork chops instead of chicken

Root Beer Glazed Pork Chops

Ingredients
2 cups root beer
2 cups reduced veal stock
4 (16-ounce) double-cut bone-in pork chops
4 teaspoons Essence, recipe follows
4 teaspoons olive oil
1 recipe Bourbon-Mashed Sweet Potatoes, recipe follows
1 recipe Caramelized Onions, recipe follows
Parsley leaves, for garnish
Directions
To make the glaze, combine the root beer and stock in a medium heavy saucepan. Bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer until reduced to a thick syrup, about 1 cup, about 50 minutes to 1 hour. Remove from the heat.

Preheat a grill to medium-high. Preheat the oven to 425 degrees F.

Season each chop on both sides with 1 teaspoon of the Essence. Grill for 3 minutes. Turn each chop 1/4 turn to make grill marks and cook an additional 2 minutes. Turn and cook on the second side for 5 minutes.

Transfer to a baking sheet. Drizzle 1 teaspoon of the olive oil over each chop. Roast until cooked through and an instant-read thermometer inserted into the center reaches 150 degrees F, 12 to 15 minutes.

Place the chops on 4 serving plates and drizzle with the glaze. Spoon the Bourbon-Mashed Sweet Potatoes and Caramelized Onions onto the plates, garnish with parsley leaves, and serve.

Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):

2 1/2 tablespoons paprika

2 tablespoons salt

2 tablespoons garlic powder

1 tablespoon black pepper

1 tablespoon onion powder

1 tablespoon cayenne pepper

1 tablespoon dried oregano

1 tablespoon dried thyme

Combine all ingredients thoroughly.

Yield: 2/3 cup

Bourbon-Mashed Sweet Potatoes:

1 3/4 to 2 pounds sweet potatoes

1/2 cup heavy cream

1/4 cup bourbon whiskey I use extract yes there is a bourbon extract

3 tablespoons light brown sugar

2 tablespoons molasses

1/8 teaspoon salt

Preheat the oven to 350 degrees F.

Place the potatoes on a foil-lined baking sheet. Bake until tender and starting to ooze sugary syrup, about 1 hour and 15 minutes, depending on their size. Remove from the oven and let sit until cool enough to handle.

Cut a slit down each potato and scoop the flesh into a large bowl. Discard the skins. Add the cream, bourbon, brown sugar, molasses, and salt and beat on high speed with an electric mixer until smooth. Cover to keep warm, or gently reheat before serving.

Yield: 4 cups

Caramelized Onions:

8 tablespoons (1 stick) unsalted butter

2 pounds yellow onions, peeled and thinly sliced

Melt the butter in a large skillet over medium-high heat. Add the onions, reduce the heat to medium-low, and cook slowly, stirring occasionally, until golden brown and caramelized, 45 minutes to 1 hour. Remove from the heat and serve hot.

Coca Cola Baked Ham

1 - 10 lb(approx.) semi-boneless ham
1 T. dry mustard
6 cups Coca-Cola
2 T spicy brown prepared mustard
1 cup dark brown sugar
2 cups fine bread crumbs

Preparation -
Remove most of the outer fat and rind from the ham. Place the ham in a shallow roasting pan. Pour Coca-Cola over the ham to about 1/2" depth in the pan. Bake at 350� for 2 to 3 hours, basting with Coca-Cola several times.
Remove ham from the pan. Discard all the ham drippings. Combine sugar, dry mustard, prepared mustard and fine bread crumbs in the pan. Add enough Coca-cola to form a thick paste. Place the baked ham back in the pan. Spread with the coca-cola paste. Pour the remaining coke in the bottom of the pan.
Bake in a preheated oven at 350� for 45 more minutes, basting about every 20 minutes or until the ham has a brown glaze. Remove from the oven and let stand for 20 minutes before slicing.

Coca-Cola Pork Chops


8 [boneless] pork chops
1 cup ketchup or bottle of Heinz chili sauce
1 cup Coca-Cola, room temperature not diet
brown sugar for sprinkling [optional]
salt and pepper

Preheat oven to 350 degrees.

Combine Coke and ketchup [chili sauce].

Place pork chops in baking pan and season with salt and pepper. Pour sauce over. Sprinkle with brown sugar.

this is an option for making the chops:
[Season both sides of chops and place into an oven bag, floured according to package directions. Pour sauce over chops, seal and snip bag and place into baking pan.]


Bake uncovered 30-35 minutes or until chops are tender. [Spoon sauce over to serve.]

Serves 8

Coca-Cola Ham

ham
Coke Classic — not Diet
light brown sugar — 1 to 2 cups

1) I buy a boneless ham (but you could use bone-in or spiral cut if you want).

2) Then, I take a 9 x 13″ pan and line it with aluminum foil. Let enough foil hang over the sides of the pan so that when the ham’s in the pan, you can bring the foil up over the ham and seal it. (This step just keeps the ham more moist and helps with clean-up later.) Put the ham in the pan. Score the ham. (Skip the scoring if you’re using a spiral cut ham.)

3) For the glaze, I put 1 or 2 cups of light brown sugar in a bowl. You don’t have to be precise. You can’t mess it up! Then, to that, add enough Classic Coke (not diet!!) to make a thick “syrup.”

4) Pour that over the ham. Bring the foil up over the ham and fold it to seal.

5) Put the ham in a 350 degree oven and bake 15 minutes for every pound. Every now and then you can unseal the foil and spoon some of the sauce up over the ham (I usually do), but you don’t have to if you don’t want.

6) At the end of the baking time, remove the ham from the oven and serve. Oh, and be sure to serve the sauce on the side. It makes a GREAT dipping sauce for the ham!!!!
