Breakfast French Toast


Ingredients

  • 2 cups slivered almonds
  • 6 eggs
  • 2 cups milk
  • 1/4 cup and 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon almond extract
  • 2 teaspoons vanilla extract
  • 24 thick slices French bread
  • 1/4 cup and 2 tablespoons canola oil or coconut oil
  • 1/4 cup and 2 tablespoons butter
  • confectioners' sugar for dusting

Directions

this recipe is for 12 servings it can be scaled down if needed
  1. Place almonds in a small saucepan over low heat. Tossing frequently, toast until lightly browned, 5 to 10 minutes. Remove from heat, and set aside.
  2. In a large bowl, whisk together eggs, milk, flour, salt, baking powder, almond extract and vanilla extract. Soak bread slices in the mixture until saturated. Place slices in a shallow pan. Refrigerate slices approximately 1 hour.
  3. Heat canola oil and butter in a large skillet over medium heat. One at a time, press one side of soaked bread slices in the almonds to coat. Fry bread slices on both sides until golden brown. Dust with confectioner's sugar before serving,

Cinnamon Roll Pancakes


Ingredients:

PANCAKES:
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 Tablespoon canola oil
1 large egg, lightly beaten
CINNAMON FILLING:
1/2 cup butter, melted
3/4 cup brown sugar, packed
1 Tablespoon ground cinnamon
CREAM CHEESE GLAZE:
4 Tablespoons butter
2 ounces cream cheese
3/4 cup powdered sugar
1/2 teaspoon vanilla extract

Directions:

1. Prepare pancake batter: In a medium bowl, whisk together flour, baking powder and salt. Whisk in milk, oil and egg, just until batter is moistened (a few small lumps are fine).
2. In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside. You don't want this to remain super-liquidy. It's best if it becomes a consistency similar to toothpaste.
3. In a medium, microwave-safe bowl- heat butter and cream cheese until melted. Whisk together until smooth; whisk in powdered sugar and vanilla extract; set aside.
4. Heat large skillet over medium-low heat. Spray with nonstick spray. Scoop about 3/4 cup batter onto the skillet. Snip the corner of your baggie of filling and squeeze a spiral of the filling onto the top of the pancake. When bubbles begin to appear on the surface, flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter and keep in a warm oven until ready to serve.
5. When ready to serve, spoon warmed glaze onto the top of each pancake.

Tips:

*Keep the heat low or your pancakes might cook up too quickly. Don't flip them until you see those bubbles starting to pop on top. Flip them with a wide spatula so you can grasp the whole thing without batter and filling dripping all over the place!
*It's best if you pour the batter onto your skillet, wait a minute or so and then swirl the cinnamon onto the batter. That'll give it a chance to set a little before you add the swirl.
*If your baggie of filling begins to get too thick, just pop it in the microwave for a few seconds to soften it up again. On that same note, it shouldn't be too runny. The consistency of soft toothpaste is perfect. If it's melty and runny, it will tend to run all over your pancakes. Once you micro it, let it sit on the counter at room temp for a while until it thickens slightly.

Gooey Monkey Bread

3/4
cup butter (do not use margarine)
1cup packed brown sugar
2tablespoons whipping cream
1/2cup coarsely chopped pecans
3 1/2cups Original Bisquick mix
1/2cup milk
2tablespoons granulated sugar
3tablespoons butter, softened (do not use margarine)
1teaspoon vanilla
1egg
1/4cup sugar
1/2teaspoon cinnamon

  1. 1Heat oven to 350°F. Spray 12-cup fluted tube cake pan with cooking spray.
  2. 2In 2-quart saucepan, melt 3/4 cup butter. Add brown sugar and cream; heat to boiling over medium heat, stirring constantly. Boil 2 minutes; remove from heat. Pour into pan; sprinkle with pecans.
  3. 3In large bowl, stir Bisquick mix, milk, granulated sugar, 3 tablespoons butter, the vanilla and egg until soft dough forms. Shape dough into 1-inch balls.
  4. 4In small bowl, mix granulated sugar and cinnamon. Roll each ball in sugar mixture; place randomly in pan. Sprinkle with any remaining sugar mixture.
  5. 5Bake 22 to 28 minutes or until golden brown. Cool in pan 10 minutes. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan. Serve warm.

Puffed Apple Pancakes


2 apples or ripe, firm pears (or substitute fresh berries or sliced bananas)
1 Tbsp canola oil
1-2 Tbsp butter
2 Tbsp sugar, maple syrup or honey
pinch cinnamon
3 large eggs
3/4 cup all-purpose flour
3/4 cup milk
Maple syrup or vanilla yogurt for serving (optional)
Preheat the oven to 450°F. Core and slice the apples or pears.
In a large skillet (ideally an ovenproof one, such as cast iron, I just use a pie pan), heat the oil and butter over medium-high heat. When the butter starts to foam, sauté the apples or pears for a minute or two. Sprinkle with the sugar and cinnamon and cook until they start to turn golden. Remove from the heat and set aside.
In a medium bowl whisk together the eggs, flour and milk – don’t worry about getting all the lumps out.
Now you can proceed one of two ways:
1) Pour the batter over the apples in the skillet and put it in the oven. (If you don’t have an ovenproof skillet, transfer the sautéed apples to a greased pie plate and pour the batter over them.) The apples will bake straight into the pancake, but it won’t rise quite as high with the fruit inside; or
2) Transfer the apples to a bowl and set them aside to serve on top, then pour the batter into the hot pan.
Bake for 20-25 minutes, until the pancake is puffed and golden. Cut it into wedges and serve warm topped with the sautéed apples or pears, a drizzle of maple syrup or dollop of vanilla yogurt.
Serves 4.
Variation – Puffed Berry Pancake: Omit the apples altogether. Melt the oil and butter in the skillet and swirl to coat it well, and pop it in the oven for a few minutes to heat up. Remove from the oven, pour the batter into the hot skillet and bake as directed. Fill the puffed pancake with fresh berries (or other sliced fruit) and serve with syrup for breakfast or as dessert with vanilla ice cream or whipped cream. I also just make the puffed pancake and serve it with maple syrup, or my buttermilk syrup

Pumpkin French Toast


This recipe is based on a per person serving, which makes two pieces. You can increase the recipe according to the number of people you will be serving.
1 egg
1/4 cup milk
2 teaspoons sugar
1/4 teaspoon vanilla
pinch nutmeg
3/4 teaspoon ground cinnamon
1 or 2 day old Pumpkin Challah Bread, cut in 2 thick slices
butter
pure maple syrup for serving
1. Whisk together egg, milk, sugar, vanilla, and spices in a shallow dish. Soak bread in the mixture on both sides, pressing the bread to help it soak up more of the liquid. In a large nonstick skillet set over medium heat, melt a small amount of butter and place the bread on top to grill. Cook on both sides until golden brown. Repeat with any remaining slices of bread.
2. Serve with maple syrup and butter, if desired.

Nutella Crepes


I have been looking at my pictures from Paris and remembered how much I loved those nutella crepes I ate everyday, you can add strawberries, or any fruit, I like it best with nutella and coconut
Crêpes
1 1/4 cups milk
2 eggs
1 Tbsp. butter, melted, or canola oil
3/4 cup all-purpose flour
1 tsp. sugar
pinch salt
extra oil, butter or nonstick spray for cooking with
Pulse the milk, eggs and butter in a blender until foamy or whisk until well blended; add the remaining ingredients and pulse or whisk until smooth. Let the batter sit for half an hour.
When ready to cook, preheat a large skillet or griddle and brush it with butter or oil or spray it with nonstick spray. Pour about a quarter cup onto the skillet and tilt it around so that it runs into a circle. Cook until the top loses its gloss, which should only take a minute or two, then flip. The bottom should be golden. Cook the other side for about 30 seconds and then slide out onto a plate. Keep warm in a 250F oven or serve right away spread with butter, sugar and cinnamon, jam or Nutella, and folded or rolled up.
Makes about 12 crepes.

Banana Breakfast Shake


1 1/2 cups fat free skim or 1% lowfat milk
1 peeled and sliced medium banana, frozen*
1/2 teaspoon vanilla extract, optional
1/4 teaspoon almond extract, optional
Cinnamon for garnish, optional
In a blender container, combine all ingredients, except cinnamon. Blend until smooth, about 20 seconds.
Pour into glasses and garnish with a sprinkle of ground cinnamon, if desired.
Makes 2 servings.

*Wrap sliced banana in plastic wrap or place in a freezer storage bag. Freeze several hours or overnight.

Apple Pancakes with Cider Syrup


Ingredients
1/2 cup all-purpose flour
1/4 cup whole wheat flour
2 teaspoons sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
2/3 cup minced peeled apple
1/4 cup raisins
2/3 cup buttermilk
1 egg, separated
2 teaspoons butter, melted
1/4 teaspoon vanilla extract

SYRUP:
1/4 cup sugar
2 teaspoons cornstarch
2/3 cup apple cider or juice
1 cinnamon stick (1-1/2 inches)
Dash ground nutmeg
Additional butter, optional
Directions
In a small bowl, combine the first six ingredients; stir in apple and raisins. Combine the buttermilk, egg yolk, butter and vanilla; stir into dry ingredients. In a small bowl, beat egg white until soft peaks form; fold into batter.
Pour batter by heaping 1/4 cupfuls onto a hot griddle coated with cooking spray; turn when bubbles form on top. Cook until the second side is lightly browned.
Meanwhile, in a small saucepan, combine the sugar, cornstarch and cider until smooth; add cinnamon stick. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Discard cinnamon stick. Stir nutmeg into syrup. Serve pancakes with warm syrup and additional butter if desired. Yield: 6 pancakes (2/3 cup syrup).

Blueberry Cheesecake Pancakes


Ingredients
1 package (3 ounces) cream cheese, softened
3/4 cup whipped topping
1 cup all-purpose flour
1/2 cup graham cracker crumbs
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs, lightly beaten
1-1/4 cups buttermilk
1/4 cup butter, melted
1 cup fresh or frozen blueberries
3/4 cup maple syrup, warmed
Additional blueberries, optional
Directions
For topping, in a small bowl, beat cream cheese and whipped topping until smooth. Chill until serving.
In a large bowl, combine the flour, cracker crumbs, sugar, baking powder, baking soda and salt. Combine the eggs, buttermilk and butter; add to dry ingredients just until moistened. Fold in blueberries.
Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden brown. Spread topping over pancakes. Top with warm syrup; sprinkle with additional blueberries if desired. Yield: 12 pancakes (3/4 cup topping).

Note: If using frozen blueberries, do not thaw them before adding to the pancake batter. Be sure to thaw any berries used in the optional garnish.

Buttermilk Syrup (for Kaitlyn) ♥


2 cubes of butter
1 cup buttermilk
2 cups sugar
2 tsp. Karo Light Syrup

combine the above ingredients and boil for 1 minute then take it off the heat and add:

1 tsp baking soda
2tsp water
2 tsp vanilla

**use a big pan so the syrup doesn't overflow when you add the baking soda**

Sour Cream Pancakes


7 tablespoons all purpose flour
1 tablespoon sugar
1 teaspoon baking soda
1/ 2 teaspoon salt
1 cup sour cream (I swapped some with yogurt when I realized I was short, to no ill-effect)
2 large eggs
1/2 teaspoon vanilla extract
Butter
Maple syrup

Heat a cast iron skillet or griddle over medium-low heat; you want it to slowly get nice and hot.

Stir the flour, sugar, baking soda and salt together in the bottom of a medium bowl. Dump the sour cream in on top and stir it together very gently; it’s okay to leave the texture a bit uneven. Whisk the eggs and vanilla in a separate bowl and stir them into the sour cream mixture, once again, being careful not to overmix.

Melt about a tablespoon of butter in your skillet or griddle and pour the batter in, a 1/4 cup at a time. Cook for about 2 minutes on the first side, or until bubbles appear all over the surface flipping them carefully and cooking for about a minute on the other side. Repeat with remaining batter.

Serve in a stack, topped with a pat of butter and a cascade of maple syrup.

Denny's-Style French Toast


Ingredients
4 eggs
2/3 cup whole milk
1/3 cup flour
1/3 cup sugar
1/2 teaspoon vanilla
1/4 teaspoon salt
1/8 teaspoon cinnamon
6 slices Texas toast thick bread
3 tablespoons butter
powdered sugar
butter
syrup
Directions
Mix together the eggs, milk, flour, sugar, vanilla, salt& cinnamon.
Heat a large skillet, or griddle.
When the skillet is hot, add 1 tablespoon butter.
If the butter smokes, your pan is too hot; turn down the heat.
Dip each slice of bread into the batter for 30 seconds on each side.
Let some of the batter drip off, then put in skillet.
cook each slice 1 1/2-2 minutes per side until each side is golden brown.
Add more butter, if necessary, to cook all of the slices.
To serve, put on plate, dust with powdered sugar. Serve with butter & hot syrup

Cinnabon Cinnamon Rolls


Ingredients
1 (1/4 ounce) package dry yeast
1 cup warm milk
1/2 cup granulated sugar
1/3 cup margarine
1 teaspoon salt
2 eggs
4 cups flour
FILLING
1 cup packed brown sugar
2 1/2 tablespoons cinnamon
1/3 cup margarine, softened
2 TBS flour
ICING
8 tablespoons margarine
1 1/2 cups powdered sugar
1/4 cup cream cheese
1/2 teaspoon vanilla
1/8 teaspoon salt
Directions
For the rolls, dissolve the yeast in the warm milk in a large bowl.
Add sugar, margarine salt, eggs, and flour, mix well.
Knead the dough into a large ball, using your hands dusted lightly with flour.
Put in a bowl, cover and let rise in a warm place about 1 hour or until the dough has doubled in size.
Roll the dough out on a lightly floured surface, until it is approx 21 inches long by 16 inches wide.
It should be approx 1/4 thick.
Preheat oven to 400 degrees.
To make filling, combine the brown sugar, flour and cinnamon in a bowl.
Spread the softened margarine over the surface of the dough, then sprinkle the brown sugar and cinnamon evenly over the surface.
Working carefully, from the long edge, roll the dough down to the bottom edge.
Cut the dough into 1 3/4 inch slices, and place in a lightly greased baking pan.
Bake for 10 minutes or until light golden brown.
While the rolls are baking combine the icing ingredients.
Beat well with an electric mixer until fluffy.
When the rolls are done, spread generously with icing.

Waffles


Ingredients

2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
2 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
Directions

Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.
Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

Raspberry Cheesecake Stuffed French Toast


Ingredients

1 cup milk
2 tablespoons vanilla extract
1 cup white sugar
2 tablespoons cinnamon
4 eggs, beaten
1 cup raspberry puree
4 ounces cream cheese, softened
1 loaf French bread, cut into 1 inch slices
butter
confectioners' sugar for dusting
nutmeg, for topping
Directions

In a bowl, whisk milk, vanilla, sugar, and cinnamon into the beaten eggs until well blended. Set aside. In a separate bowl, cream together raspberry puree and cream cheese until smooth. Make 'sandwiches' by cutting each slice of bread in half and spreading raspberry-cheese mixture in the center, then top with the other half.
Melt butter over medium heat in a large skillet or griddle. Dip bread into egg mixture, coating thoroughly. Cook until well-browned on both sides, about 5 minutes. Dust with confectioners' sugar and nutmeg. Serve immediately.

Puff Pancakes

1 TB butter
1/2 tsp baking powder
4 eggs
2/3 cup flour
1/4 tsp salt
1 cup milk
2 TB butter

Heat oven to 425 In the oven heat 1 TBs butter in 10 inch pie pan for 10-13 minutes or until butter is all melted and starts to sizzle.
Mix all dry ingredients and eggs at medium speed. Gradually add milk and remaining butter. Pour batter into hot pie pan. Bake at 425 for 15 minutes, then reduce temperature to 375 bake for an additional 10-12 minutes or until puffed and golden brown. A well will form in the center and edges will puff up.

Hash Brown Quiche


Ingredients
3 cups, shredded frozen hash browns, thawed and drained
4 tablespoons (1/2 stick) butter, melted
3 large eggs, beaten
1 cup half-and-half
3/4 cup diced cooked ham
1/2 cup diced green onions
1 cup shredded Cheddar
Salt and freshly ground black pepper
Directions
Preheat oven to 450 degrees F.

Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp.

Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.

Lower the oven temperature to 350 degrees F and bake for about 30 minutes until the quiche is light golden brown on top and puffed.

Almond Danish Swirls

6 ounces cream cheese, softened
1 teaspoon almond extract
1/2 cup confectioners' sugar
1/2 cup slivered almonds, chopped fine
2 (8-ounce) cans refrigerated crescent dinner rolls
1 egg white
1 teaspoon water
Glaze:
1/2 cup confectioners' sugar
4 teaspoons milk
1/2 teaspoon almond extract
In a small bowl, beat the cream cheese, almond extract, and sugar until fluffy. Fold half of the chopped almonds into the cream cheese mixture. Separate 1 can of dough and assemble into 4 rectangles. Firmly press the perforations to seal. Press or roll each piece of dough to form a 7 by 4-inch rectangle, and spread each with about 2 tablespoons of the cream cheese filling to within 1/4-inch of the edges. Starting at the short end, roll each rectangle tightly into a cylinder. Repeat with the other can of dough and remaining filling.
Place on a plate, cover with plastic wrap, and chill until firm, about 30 minutes.
Preheat the oven to 350 degrees F while the rolls are chilling.
Remove from the refrigerator and cut each roll into 4 slices. Place 1/2-inch apart on ungreased baking sheets. In a small bowl, combine the egg white with 1 teaspoon water. Brush over the swirls. Sprinkle with the remaining chopped almonds. Bake for 18 to 20 minutes, until light brown.
While the swirls are baking, combine the glaze ingredients in a small bowl. Cool the swirls for 3 minutes on wire racks placed over a sheet of waxed paper. Drizzle the icing over the warm swirls.

Country Fried Steak with Biscuits and Gravy


Ingredients
Steak and Gravy:
1 1/2 cups, plus 2 tablespoons all-purpose flour
1/2 teaspoon freshly ground black pepper
8 (4-ounce) tenderized beef round steak (have butcher run them through cubing machine)
1 teaspoon House Seasoning, recipe follows
1 teaspoon seasoning salt
2 cups buttermilk
2/3 cup vegetable oil
1 1/2 teaspoons salt
1 quart whole milk
1/2 teaspoon monosodium glutamate (recommended: Ac'cent), optional
1 bunch green onions, or 1 medium yellow onion, sliced
Basic Biscuits:
1 package yeast
1/2 cup lukewarm water
5 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon baking powder
2 tablespoons sugar
3/4 cup solid shortening (recommended: Crisco)
2 cups buttermilk
Directions
Steak and Gravy: Combine 1 1/2 cups flour and 1/4 teaspoon of pepper in a small bowl. Sprinkle 1 side of the meat with the House Seasoning and the other side with the seasoning salt, and then dredge the meat in buttermilk and then flour. Heat 1/2 cup oil in a heavy skillet over medium-high heat. Add 2 or 4 of the steaks to the hot oil and fry until browned, about 5 to 6 minutes per side. Remove each steak to a paper towel-lined plate to drain. Repeat with the remaining steaks, adding up to 1/4 cup more oil, as needed.

Make the gravy by adding the 2 tablespoons remaining flour to the pan drippings, scraping the bottom with a wooden spoon. Stir in the remaining 1/4 teaspoon pepper, and the salt. Reduce the heat to medium and cook, stirring frequently, until the flour is medium brown and the mixture is bubbly. Slowly add the whole milk and the Ac'cent, if using stirring constantly. Return the steaks to the skillet and bring to a boil over medium-high heat. Reduce the heat to low, and place the onions on top of the steaks. Cover the pan, and let simmer for 30 minutes.

Biscuits: Preheat oven to 400 degrees F. Dissolve yeast in warm water; set aside. Mix dry ingredients together. Cut in shortening. Add yeast and buttermilk and mix well. Turn dough onto lightly floured surface and roll out to desired thickness. Cut with small biscuit cutter and place on greased baking sheet. Bake for 12 minutes or until golden brown.

Split biscuits in half and top with country fried steak and drizzle with gravy.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

Sweet Sausages


Ingredients
1 (16-ounce) package smoked sausage
1 1/2 cups maple syrup
Directions
Cut sausage into 1-inch rounds. Place in large skillet over medium heat and add the maple syrup. Bring to a boil, then reduce heat to low and simmer for 20 minutes. Serve piping hot.

Cook's Note: Sausages can be cooked in a crock-pot on low for 2 hours.
